You will need the following ingredients:

1 and ¼ lbs of 1 inch cubed eggplant
2 pieces of onions, medium sized and sliced thinly
2 celery ribs in 1 inch pieces
2 tablespoons of olive oil
I can of tomatoes, diced and undrained
3 tablespoons of tomato sauce
½ cup olives, halved
2 tablespoons balsamic vinegar
2 tablespoons sugar
2 tablespoons drained capers
1 teaspoon of dried oregano leaves
Salt and pepper

Mix the eggplant, celery, oil, onions, tomatoes and sauce in the pot. Set on low, and cover. Cook for three and one half to four hours and once the eggplant is tender, stir in the olives, vinegar, capers, and oregano leaves. Add a little salt and pepper if you like. Let it stay for 45 minutes to one hour.
