Slow Cooker Dish: Italian Chicken Cream Stew
Italian dishes are more popular for their tomato-based stews. But here’s a quick Italian chicken recipe that uses cream for a sauce with ingredients you can easily pick up at any grocery store. While it’s not tomato-based it incorporates prepared herbs and spices popular in Italy, all of which goes well with chicken. This slow cooker chicken dish is a savory, rich entrée that you can serve up with pasta or rice.
To make at least four servings of this slow cooker dish, Italian chicken cream stew, you’re going to need the following ingredients that will fit in a 4-quart or 3-quart slow cooker.
2 pounds skinless, boneless chicken breasts
8 ounces of cream cheese
1 tablespoon of Italian dressing mix, dry
1 and 1/2 cups of cream of onion soup, condensed
4 tablespoons butter
1 teaspoon Italian seasoning, dry
1/2 cup of water
A dash of pepper (1/8 teaspoon)
1 small pack of baby carrots
Dump the baby carrots first on the bottom of the slow cooker. Placing them in first allows them to cook well under the same time as the meat. Then, cut the chicken breast into strips (cutting them into thick strips is better) and place them on top of the vegetable.
To make the cream sauce in this slow cooker Italian chicken dish, first, melt the butter in the microwave for a minute or two and pour it in a mixing bowl (you can also melt the butter in a small pot under low heat but melting it in a microwave is quicker). Soften the cream cheese and pour it in the same bowl too. Follow it with the rest of the ingredients (dry spices, cream of onion soup, water, and pepper) and stir it up well.
Transfer the Italian cream mixture into the slow cooker. Make sure you pour it all over the meat as you’re transferring the sauce. Put the slow cooker lid on, set it to “low” and cook it for 6-8 hours.
Be sure to serve this rich Italian chicken cream stew hot and pour it over any kind of pasta or rice. You can also substitute whole button mushrooms in stead of baby carrots for the vegetable. After trying this recipe out, you’ll find that Italian dishes that you can make in a slow cooker are not confined to tomato-based sauces alone. And given the availability of its ingredients, it’s a good, safe recipe that everyone will enjoy during dinner time or even lunch the next day.
