How to Prepare Pheasant Dishes

Pheasant is a game bird which is very popular among hunters during hunting season in autumn. If you like to have a unique poultry dish once in a while on your dining table, then you should know how to prepare pheasant dishes.

Preparing pheasant dishes is just like cooking your regular poultry. All you have to do is know the basics in preparing pheasant dishes. Here are some of the things you should remember.

If you are cooking a young pheasant, your oven should be turned on at 350 degrees for 25 minutes while cooking a one pound young pheasant. It is just like roasting a chicken you can also prepare stuffing for the pheasant to be tasty.

You can also broil a young pheasant. For broiled pheasant dishes, cut open the back portion of the pheasant and briskly rub the meat with garlic and butter. The oven tray should be 4 inches under the broiler. Add fat, oil, or wine and let it cook until the meat is tender.

Older pheasants should be bard before you cook them. Cut some fleshy parts of the bird such as breasts and thighs and you can put small strips of bacon into them. It is better to braise an old pheasant. You can brown the game on a pan with lard. Put it in a casserole with mushrooms, onions, and Marsala and cover it. Bake the dish for thirty minutes.

Moreover, roasting an old pheasant is also a good idea for pheasant dishes. You can cook the meat with sauce and bard it as well, this time putting apples and onions into the cuts. Oven should be at 400 degrees and the pheasant should be roasted for 20 minutes. Tear apart the meat and discard the bones. Cook the deboned meat in a stock for two hours. The stock is made up of onions, garlic, bay leaves, tomatoes, dry red wine, water or chicken stock, and parsley. Let it simmer until the stock was only half its original amount. Add other ingredients such as cream sauce, mushrooms, and red wine. Leave it for another 25 minutes.

Furthermore, you can also add pheasant soup to your list of pheasant dishes. To prepare a pheasant soup, sauté ingredients like onions, garlic, celery, and carrots in a pot. Place the chopped pheasant meat in the pot and wait for them to turn brown. Chicken stock and mushrooms with kernel corn and thyme should be added and wait for 10 to 15 minutes. Remove the small pieces of pheasants from the pot and debone them. Put them back to the pot and reheat.
