Gumbo in Crock Pots: Getting it Right

If you love gumbo but for some reason can’t get it to taste right, you may need to avail of that slow cooker in your kitchen. With it, you can fine tune the dish and serve it just the way you want it.

Gumbo with Chicken

The ingredients for this easy slow cooker recipe are 1/3 cup of cooking oil, 15 ounces of sausage (sliced), chicken broth (3 cups), chopped cooked chicken (2 cups), diced cooked chicken (also 2 cups), a couple of cups of okra, half a cup of green pepper, a cup of onion, minced garlic (4 cloves), half a cup of chopped celery, and some salt.

This gumbo dish also needs half a teaspoon of pepper, ground red pepper (1/4 teaspoon), and white rice (boiled).

Begin by making the roux: put some flour and oil in a pan and stir them until they get smooth (medium high heat, constant stirring for 4 minutes will do). When it has turned reddish, let it simmer down.

Get the chicken broth and pour into the slow cooker. Throw in the okra, sausages, green peppers, garlic, celery, pepper, salt, onions and all the rest. Let it cook for about 4 hours on a high setting. When it’s finished, serve it with the rice.

Catfish Gumbo

The following are required: bacon (4 slices, diced), chopped onion (1/4 cup), butter (1/4 cup), cooked okra (2 cups), canned tomatoes (a couple of cups, not drained), garlic powder (half a teaspoon), ¼ cup of lemon (sliced thin), boiling water (3 cups), and half a teaspoon of salt.

Also have the following: Tabasco sauce (3 to 4 drops), flour (2 tablespoons), Worcestershire sauce (1 teaspoon) and catfish (cooked, 2 cups).

Start this slow cooker gumbo soup by cooking the bacon, adding the butter and onion. When it attains a transparent look, open the slow cooker and put it in along with the okra, garlic, lemon and tomatoes. Set it to low. After a couple of hours, add the water, Tabasco sauce, Worcestershire sauce and salt. Finally add in the butter and stir.

When it has attained thickness, bring in the catfish. All in all, it will take about 4 hours to cook this in a slow cooker on high settings.

As you can see, there’s really nothing to making gumbo soup or stew. So when you are in the mood for it, you now know how simple they are to prepare with a slow cooker.
