Crock Pot Recipes for Vegetarians

We know of a lot of crock pot recipes for beef dishes, chicken dishes, and pork dishes but it does not mean that most dishes cooked in crock pots are not healthy. As a matter of fact, there are a lot of beef or chicken or pork crock pot dishes that are intended for people who are health conscious. However, there are people who do not eat beef, pork or chicken, or there are people whom we call vegetarians. The Israeli Wheat Berry Stew is a dish that vegetarians will definitely love. This vegetarian crock pot recipe is composed of such ingredients as two green peppers, one half teaspoon ground black pepper, three teaspoons tumeric, five teaspoons of ground cumin, four cloves of garlic which will be minced, one large onion that will be sliced, six small potatoes that will be cut in half, one cup of wheat berries, one and a half cups of Great Northern beans, and five cups of Trader Joe’s maranara.

This vegetarian crock pot recipe is easy to follow because all you need to do is to combine all the ingredients inside the crock pot and let it cook at high temperature for a maximum of ten hours.

The Layered Dinner is also a dish that will definitely be enjoyed by vegetable lovers. In this vegetarian crock pot recipe, you will need two tablespoons of parsley flakes, one eighth teaspoon of sage, one half teaspoon of cinnamon, two teaspoons of chili powder, one teaspoon of basil, one teaspoon of dry mustard, one teaspoon of grounded thyme, one fourth cup of low-sodium tamari, and two and a half cups of tomato sauce for the dish’s sauce. The other ingredients needed are one cup of peas that are either fresh or frozen, one cup of corn that are also either fresh or frozen, one sliced zucchini, one sliced green pepper, two sliced carrots, one sliced large onion, and six sliced potatoes. If you want to add more vegetables, the optional vegetables that can be used are green beans, broccoli and mushrooms.

The cooking method starts by layering the vegetables in the crock pot. The first vegetable to be placed in the crock pot should be the potatoes, and then the onion, carrots, green pepper, zucchini, corn and peas. Combine the sauce ingredients and mix them well before pouring the mixture over the vegetables inside the crock pot. If you are going to cook it on high temperature, the cooking time should be approximately six hours. If you intend to cook this vegetarian crock pot recipe on low temperature, the cooking time should be set at approximately twelve hours.

If you follow these two vegetarian crock pot recipes, you will be able to serve approximately eight persons.
