Chicken Slow Cooker Casserole Recipe

This slow cooker casserole recipe takes about 30 minutes to prepare and about 6 hours to slow cook. Don’t be surprised if it fills the kitchen with a mouth-watering aroma. It serves 4 to 6 people.

Prepare 6 pieces of chicken legs and/or thighs, 2 chopped carrots, 2 small or medium sliced potatoes, a small copped leek, 2 small chopped onions, a red chili with seeds taken out, some stringed thyme twigs, a chopped bulb funnel, a half bottle of white wine, and a fourth of a pint of chicken stock for this slow cooker casserole recipe.

Here’s how this slow cooker casserole recipe is prepared. If the chicken legs and/or thighs are big enough to be chopped in halves, do so with a cleaver for better cooking and for this slow cooker casserole recipe to accommodate more servings. Wash the chicken pieces and put in a bowl and set aside. Wash and slice the potatoes as thick as pound coins and wash again. Wash and chop carrots the thickness of two thumbs each.

Then, wash and chop the leeks as thick as one’s thumb, peel and chop the onion into fine pieces, and de-seed and chop the red chili into quarters lengthwise and then chop into half crosswise to bring out more flavors from it. Some slow cookers can overheat food at the bottom, so use the sliced potatoes as protection at the bottom for this slow cooker casserole recipe, and set the chicken pieces on them.

Then, fry the chicken pieces on a separate pan until brown, with a little oil, garlic, and onion. Then put the brown-fried chicken pieces in the slow cooker on top of the potato platform. Put in the chili and thyme, spread around the chicken pieces. Then pour the rest of the veggie ingredients of this slow cooker casserole recipe on top of the chicken pieces. Take out the oil residue from the pan where the chicken was partly fried, scrape and clean the pan with the white wine, and pour that wine over the whole chicken slow cooker casserole recipe. Add the chicken stock, pouring it over the whole piece. Slow cook for 2 hours on high heat, and then another 4 hours on low heat.

During serving, make the chicken pieces of this slow cooker casserole recipe as the center piece of the serving dish with the vegetables arrayed on the sides. Pour over the juicy sauce residue and serve while steamy hot with crusty bread, mashed and buttered potatoes, or rice.
